Talk about munchies, we had some tasty treats that included~ grilled chicken, stuffed portabellas ( recipe below) , guacamole dip, mango salsa, cheese dip and a great wine cocktail to top it off. Yummy!! Now that just means I have to step it up a notch on the training this week. I didn’t over do it but I need to keep focused. Now, I did over do it on Saturday with Pizza hut, but I figured since I was going out dancing, that just about wiped out the extra calories, right? ☺
The training is getting a little tougher now. I’m up to 70 minutes! I have got to get some more tunes on my iPod before the “big day. “ Does anyone have any suggestions for good walking/running music? Please leave a comment if you do. I’m running out of good ones.
With an action packed weekend, I ended up a little busier than I had expected so I didn’t make it to take Eagle pictures. I did however hike through a snow covered corn field to get a picture of an old schoolhouse.
I found out very little history about this place It was called Penn #8 because it was in the Penn Township of Jefferson County, Iowa. Believe it or not 1-12 grades where held here with a total of about 10 children. It was taught by Myra Peck. A friend of mine, Larry Hook attended this school until was in the 3rd grade then it was closed.

Stuffed Portabellas
1 lb. large portabella mushrooms
1/4 c. celery finely chopped
2 TBSP. onions finely chopped
2TBSP. red bell pepper finely chopped
1/2 lb. crab claw meat
2 cups oyster crackers crushed
1/4 tsp. garlic powder
1/2 tsp. Old Bay seasoning
1/4 tsp. salt & pepper
1 egg beaten
1/2 cup water
6 white cheddar cheese slices
Preheat oven to 400. Cut stems from mushrooms and set aside. Saute celery, onion, bell pepper in butter and cool in refrigerator. Chop mushroom stems fine and combine into sauteed veggies. Add remaining ingredients except the cheese slices. Spoon into mushrooms, cover with cheese slices and bake for 12-15 minutes.
Love your pictures - too bad someone doesn't fix up the old school instead of letting it fall apart. Bet it was neat in it's day. Yea - snow in Iowa - is it ever gonna stop. Keep up the good work with your training and weight loss - you are doing an amazing job and I am sooooooooooooooo PROUD of you.
